Lunch - Steamed Salmon with Asparagus Salad

Ingredients

  • Preparation: 5 minutes
  • Cooking: 15 minutes
  • Serves 4
  • 4 thick salmon steaks
  • 2 bunches asparagus
  • 1 pkt mixed salad leaves
  • ½ cup semi-dried tomatoes
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • Freshly ground black pepper
  • Gourmet potatoes, to serve

Directions

  1. Steam salmon for 6 – 8 minutes. Snap woody base off asparagus.
  2. Microwave for 1 minute.
  3. Rinse under cold water.
  4. Combine asparagus, salad leaves and tomatoes in a bowl.
  5. Combine vinegar, oil and pepper in a jar with a lid.
  6. Arrange salad on four serving plates.
  7. Place fish on top. Pour dressing over.
  8. Serve with boiled gourmet potatoes.
