Dinner - Nutty Vegetable and Chicken Stir-fry

Ingredients

  • Preparation: 8 minutes
  • Cooking: 10 minutes
  • Serves 4
  • 1 tblspn cornflour
  • ¾ cup orange juice
  • 3 tblspn light soy sauce
  • 1 tblspn honey
  • 2 tblspn olive oil
  • 2 stalks celery, sliced
  • 2 carrots, peeled and diagonally sliced
  • 2 chicken breasts, cut into strips
  • ¼ cup cashews
  • Steamed rice, to serve

Directions

  1. Combine cornflour, orange juice, soy and honey in a small bowl.
  2. Heat 1 tablespoon of oil in a wok.
  3. Add celery and carrots.
  4. Stir-fry for 3 minutes.
  5. Add remaining oil. Add the chicken. Stir-fry for 5 minutes.
  6. Add sauce to the wok.
  7. Stir-fry until sauce has thickened.
  8. Add cashews.
  9. Toss to combine.
  10. Serve with freshly cooked rice.
