Dinner - Noodles with Spicy Chicken and Mango

Ingredients

  • Preparation: 10 minutes
  • Cooking: 10 minutes
  • Serves 4
  • 2 tblspn oil
  • 2 red chillies, finely sliced
  • 2 cloves garlic, crushed
  • 1 tspn freshly grated ginger
  • 1 tspn ground coriander
  • 500 g fresh Asian-style egg noodles, pre-cooked
  • 1 tblspn soy sauce
  • 250 g chicken strips, cooked
  • 1 large mango, peeled and diced
  • ½ cup chopped spring onion

Directions

  1. Heat oil in a wok.
  2. Add chillies, garlic, ginger and coriander.
  3. Cook, stirring frequently, for about 1 minute.
  4. Add noodles and toss through mixture for about 2 minutes.
  5. Add soy sauce, chicken strips, mango and spring onion.
  6. Cook for a further minute or until heated through. Serve immediately.
