Lunch - Avocado Salsa with Potato Wedges

Ingredients

  • Wedges
  • 6-8 medium potatoes

  • Oil
  • Salt or creole seasoning
  •  
  • Salsa
  • 2 firm ripe avocados, diced
  • ½ red onion, finely diced
  • 1 chilli, finely chopped
  • ½ lemon, juiced
  • 4 tblspn chopped fresh coriander
  • Freshly ground black pepper

Directions

  1. Microwave whole potatoes until just tender.
  2. Cut each one into 6 wedges.
  3. Place wedges in a single layer on a wire rack, brush with oil and sprinkle with a little salt or creole seasoning.
  4. Bake in a hot oven for 30 minutes or until crisp.
  5.  Place all salsa ingredients in a bowl.
  6. Mash until well combined.
  7. Serve potatoes on a large platter with a bowl of salsa.
  8. Accompany with a garden salad.
