Dinner - Orange Chicken with Flaked Almonds

Ingredients

  • 4 boneless chicken breasts
  • 2 tblspn butter
  • 2 oranges, grated rind and juice
  • 2 tblspn honey
  • 1 tspn turmeric
  • 3 tblspn chopped herbs
  • ¼ cup water
  • ¼ cup flaked almonds, toasted

Directions

  1. Prick chicken with a fork.
  2. Heat butter in a frying pan. Fry chicken until well browned.
  3. Combine orange rind and juice, honey, turmeric, herbs and water. Pour over chicken and Cover.
  4. Simmer chicken for about 30 minutes, basting occasionally.
  5. Place chicken and sauce on a serving dish. Sprinkle with toasted almonds.
  6. Serve with green vegetables and baked potatoes.
