Dinner - Chilli Con Carne

Ingredients

  • 1 tblspn oil
  • 500 g minced beef
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 4 tomatoes, chopped
  • 2 cups water
  • 1 tblspn tomato paste
  • 1 red chilli, finely chopped
  • 3 cups diced Royal Blue potatoes, cooked
  • 425 g can red kidney beans, drained
  • Sour light cream
  • Spring onions or chives, to garnish
  • Natural corn chips, to serve

Directions

  1. Heat oil in a saucepan.
  2. Cook mince, onion and garlic. Sauté until onion is soft and mince is well browned.
  3. Mix in tomatoes, water, tomato paste and chilli. Bring to the boil.
  4. Reduce heat. Simmer for 20 minutes. Add potatoes and kidney beans.
  5. Warm through. Divide into serving bowls.
  6. Top with sour cream and chopped spring onions.
  7. Serve with warm corn chips.
