Lunch - Tuna Salad Wraps

Overview

Looking for a great tasting lunch thats quick and easy to make. The combination of tuna and tortillas will give you the energy you need to face the rest of the day and also make it to your next meal without feeling the need to snack. Serves 2

Ingredients

For the tuna salad:
  • 170g can tuna, drained
  • 1/4 cup non-fat mayonnaise
  • 2 tbsp finely diced celery
  • 2 tbsp finely diced, sweet onion

For the wraps:
  • 2 large flour tortilla
  • 2 large lettuce leaves, green leaf, or iceburg, shredded
  • 2 large slices ripe tomato, sliced very thin

Directions

For the tuna salad
  1. In a mixing bowl, combine the tuna, mayonnaise, celery and onion.

For the wraps:
  1. Lay the tortillas out on a work surface and divide the tuna mixture among the tortillas, spreading it out in the center of each tortilla.
  2. Divide the shredded lettuce among the tortillas and top with a slice of tomato.
  3. Tightly roll each tortilla into a cylinder, ending with the seam side down.
    (The wraps can be stored in the refrigerator for up to 3 days.)
  4. Cut the wraps in half on the diagonal and serve.
